Guar
The food and beverage industry use various grades of guar gum (a
hydrocolloid) as thickening, emulsifying, stabilizing,
suspending, and binding agents. As an additive, guar lends a
smooth texture to a range of products like cheese, ice cream,
whipped topping instant pudding and various bakery mixes. Guar
improves the flow and texture of sauces, marinades and salad
dressings, and can increase the shelf life of many food
products. Guar can also be utilized as a binder in meat products
such as sausage.
Guar is a cost-effective emulsifying, and texture enhancing
additive to gluten-free flour. It is increasingly popular with
consumers who have developed Celiac disease, or who are looking

Psyllium
As a soluble fiber, psyllium increases the fiber content of many
food products such as cereal, bread, energy bars, instant
noodles and certain beverages. Outside of industry,
health-conscious home cooks employ psyllium powder as well as
guar gum in gluten-free recipes, or to boost fiber content.
